Well, here it is. My damn blog. First I'd like to point out on of my recent most favorite time-killer reads at work - Black Table. So read and enjoy - its all written by late 20-somethings in one form of existential crisis or another (just like me).
Ah yes, the "F" part of this 'log: Last night I made risotto for a crowd of 4, including myself. Risotto is one of my recent "oh shit, why didn't I figure this out before?" cooking trends. It is so easy, I'm kicking myself for every night I ate chips instead of cooked. This is what I put in it: 1 garlic clove, 2T olive oil, 1 part of a shallot. Brown them all up, add about 2/3c rice, brown that up. Then start adding the broth - I used a vegetable/mushroom mixture. When its nearly done I took the 1/2lb of chicken breasts I had already cooked, chopped them up and quickly browned them in some more oil, plus parmesan cheese and tarragon. It worked rather nicely. Then I dumped that into the risotto, added a little more cheese and a splash of cream, and it was done. Not *quite* enough to feed 4 people, but we got by. Next time I'd do 1c of rice.
