Blueberry Cake Cravings  


On a leisurely morning after going for a run with a friend, I had the urge for pancakes. I held that urge in check long enough to drive past the Flying Star with their decent-but-too-sweet gigantic offerings, all the way home to my own kitchen where I concocted some blueberry goodies all of my own.

I don't even remember the recipe, but just search online for a basic buttermilk mixture (or use a mix), and then while the pancakes have just started to set in the skillet, drop a handful of fresh or thawed berries right on top of the raw batter. When you flip the bugger over the berries will be mostly incorporated into the cake, as if by magic.

And magic these little treats were, needing only a bit of salty butter and no syrup to complete the experience.
