Ultra Small Batch Cookie!
There is a cookbook that I've been eyeballing, called "Small Batch Baking". The idea of this is for people who don't have a ton of opportunity to 'dispose' of large quantities of baked goods, or just want to try out something in a manageable size before springing for the whole batch. This can be reasonable, as high quality baking ingredients can be expensive (good chocolate, butter, etc....).

Further, I should note that in no way do these recipes take any less time than a full batch - so making just 4 muffins or whatever might take just as long as making 2 dozen, since many of the ingredient combining steps remain the same. It is definitely amusing to see the list of items read something like this, "1 TBSP flour, 1 tsp sugar, 1/8 tsp baking powder....", etc.

So I was having a chewy cookie craving and fighting the urge to drive into town just for a Flying Star triple ginger cookie, and I found the recipe for oatmeal raisin cookies with small-batch proportions. Scaling it down even further from 2 cookies to 1, I made this:
batch of one huge cookie

Looks tasty, eh? It was actually pretty big - about 3.5" across and nearly 2" in height. I was hoping it would spread out more, but perhaps I chilled the dough too much before popping it in the oven.

I didn't write down the recipe, but check out the book - it seems like a useful tool to have around.
