O Solo Creole....  


Just a quick dinner for one - Creole-ish stewed okra and tomatoes, both of which I had on hand and in just another short day or two they would have been compost-quality. There's an Indian bent due to my use of curry instead of other seasonings...

CREOLE-INDIAN TOMATOES & OKRA

Saute one small diced onion with 1 stalk celery (also diced) in olive oil.
Add a cup or two of de-topped okra and chopped tomatoes, stir and cook a few minutes.
Add about a teaspoon vindaloo curry seasoning plus one cup chicken stock and simmer for 15 minutes, or until tender.

At the very end, poach an egg in the stew and serve it up to one hungry diner.
