Stupendous Salad

In light of a recent request for the 'formula', I thought I'd share my daily salad construction process and attempt to horrify at least a few of you. About 5 days per week this is my lunch. The recipe below is the most basic construct; many times I will have a different protein, such as 3-4 ounces of lean meat or calves liver (pan-seared, usually). Often I will also add more veggies, such as a cup of steamed & seasoned eggplant or zucchini. The possibilities are endless, of course, but the freshness comes from the salad dressing and the crunchy greens and bell pepper.
To make this a more friendly-looking plate/portion, simply cut down the amount of greens by half or more.... but I like my greens, so this is the true proportion:
Stupendous Salad (serves 1)
1/2 big head of romaine lettuce, or 1 "heart of romaine", or 1/3lb mixed salad greens (8-10 cups of chopped greens, basically) 1 red bell pepper 1 cup egg whites, or egg beaters 1 tbsp cider vinegar 1 tbsp spicy mustard of your choice 1 tbsp buttermilk powder (or 2-3 tbsp buttermilk or yogurt) 1 tsp spice mix of your choice, such as curry or Spike or 'italian seasoning'... whatever you have around that you like 1/2 tsp freshly ground pepper kosher or sea salt
First, start the protein - heat up a skillet to med, grease it, and dump the egg whites in. Don't stir. Shake some salt and some of the seasoning mix from above onto the eggs.
Next, make the dressing. In a very large bowl, mix the cider vinegar, mustard, buttermilk, spices and pepper until pretty smooth. Add salt or soy sauce to taste.
Check on the eggs, flip the big pancake-looking thing over to cook the other side.
Then, chop up the salad greens and bell pepper into bite sizes and dump them on top of the dressing.
Remove the egg-circle from the pan and cut it into bite sized pieces, then dump it on top of the salad. Mix thoroughly - it will seem like there is not enough dressing but just keep mixing and it will eventually coat everything just nicely. Taste and add more salt or pepper if needed.
That's it! Insane amount of yummy leafy greens, good protein, and a heck of a fun thing to eat with chopsticks while watching Tivo'ed Molto Mario episodes.Labels: egg whites, home cooking, salad
